Milk Kefir is a delicious, slightly carbonated fermented Healthy Probiotic Drink. It originated roughly 2,000 years ago in Russia, the Caucasus Mountains between the Black and Caspian Seas, making Kefir one of the oldest milk ferments in existence.

Rinse Kefir Grains with filtered water. Place them in a clean glass jar, and add milk.
Important! Kefir will ferment much more quickly in the summer and warmer temperature. Also, if you have other types of fermentation such as bread yeasts or kefir, keep these cultures physically separate from each other to prevent cross contamination. If you take these extra steps, you will rewarded with a healthy drink.

When Kefir is Ready, Stir and Strain out Kefir Grains. Rinse and Start fermenting a new batch again.

The cloth cover material should be porous enough to let air in but not enough to allow fruit flies or dust inside. We created custom-made covers from sheer polyester, a durable and beautiful fabric with high thread count in all sizes and shapes that you need for your fermentation and cheesemaking! This fabric is so easy to clean (Hand wash!) and it dries quickly. Drained cheese will easily separate from the cloth with little to no residue. It will remain beautiful for many years.

6 WAYS TO USE MILK KEFIR


Milk Kefir and Whey Smoothie
Simply blend milk kefir with any fruit like banana, peaches, blueberries or oranges. You may use Whey for a protein-rich drink by blending spinach, avocados or kale.
Healthy Cheese Spread made from Milk Kefir
Step 1. Strain out grains and leave Kefir on the counter at room temperature until whey separates​
Step 2. Place a cheesecloth in a plastic strainer over a glass bowl and pour the kefir in the cheesecloth. Collect whey for another recipes.​​
Step 3. Twist cheesecloth so that the cheese will form into a ball shape. Place in refrigerator for approximately 24 hours or until whey stops dripping from the cheesecloth.​​
Step 4. Use spices like garlic, chive, dill to make unbelievably tasty and healthy cheese spread. Great on crackers, tortillas, crepes, fish and raw vegetables (carrots, celery).​
Pancakes from Milk Kefir
2 cups Kefir at room temperature.
½ tsp baking soda
1 large egg
1 Tbsp sugar
½ tsp salt
About 1½ cups flour
1 Tbsp oil

Mix Kefir with baking soda. In a different container, mix eggs, sugar and salt, then add to kefir mixture. Add flour. Let mixture sit for 30 minutes, then add oil. Cook on a hot skillet.
Healthy Ice Cream made from Milk Kefir
1 egg
¾ cup heavy cream
1 ¼ cup Milk Kefir
¼ cup honey to taste
1 tsp vanilla extract

Step 1. Mix the egg with the heavy cream and cook in a small saucepan over low to medium heat, stirring constantly until you obtain a somewhat thick custard.
Step 2. Remove from the heat, and allow to cool.
Step 3. Mix in the Milk Kefir, vanilla extract or honey to taste.
Step 4. Chill the mixture.
Recipe for crepes from Whey
2½ cups Whey (warm), ½ tsp baking soda
1 large egg, 1 Tbsp sugar
½ tsp salt, about 1 cup flour
1 Tbsp oil

Mix whey with baking soda. In a separate bowl mix eggs with sugar and salt, then add to whey mixture. Add flour. Let mixture sit for at least 30 minutes, then add oil. Cook on a hot skillet.

Recipe for Croissants made from Milk Kefir Cheese
1 cup Milk Kefir Cheese, ⅓ cup butter
¾ cup flour, ¼ teaspoon salt,
½ teaspoon of baking powder, ¼ teaspoon of baking soda,
¼ cup of sugar

Preheat oven to 350⁰. Let Kefir Cheese and butter reach room temperature and then mix together. Add flour, salt, baking soda and baking powder to cheese and butter mixture. Gradually add more flour until you obtain a soft, slightly sticky dough. Divide the dough into two pieces and put in the refrigerator overnight. On a lightly floured surface roll out one piece of dough into a 14” diameter circle. Sprinkle dough with sugar and cut the circle like a pizza into 8 segments. Roll each segment into a tube from the outer edge to the center corner. Repeat process with the second piece of dough.
Lay parchment paper on the bottom of a cookie sheet and transfer the 16 rolls to the sheet. Bake for about 12 minutes. Enjoy!
